If you haven’t guessed, we are pretty big fans of matcha so we are always coming up with new ways to consume it (and this is one of our favourites yet!). This matcha coconut fudge has a nice creamy texture from the coconut manna but gives you a night energy boost. Matcha has an amino acid called L-theanine which can help improve mental focus and clarity in a slow-released way. Matcha is also extremely high in anti-oxidants which can slow cell degeneration and impede the aging process, promoting smoother and tighter skin. Because it’s sweetened with maple syrup then there is no refined sugar added, and you could even substitute with stevia. Enjoy as an afternoon treat, or even for breakfast they are so good!
MATCHA COCONUT FUDGE

This super simple recipe is rich and creamy with healthy fats while the matcha is a high source of anti-oxidants and L-theanine for a calm and focused feeling.

- 1 cup coconut manna melted in hot water
- ⅓ cup coconut milk cream refridgerated
- 3 tbsp coconut oil melted
- 1 scoop grass fed collagen
- 1 tbsp matcha green tea powder
- 1/4 tsp vanilla bean powder or extract
- 1/4 - 1/2 cup maple syrup
- Melt the coconut manna by placing the jar in a bowl of hot boiled water.
- Remove the coconut milk from the fridge and scoop the cream from the top. Whisk in the melted coconut oil.
- Add the collagen, matcha green tea, vanilla, and maple syrup, stirring well. (If using vanilla extract then use more, and if using the vanilla bean powder then use less)
- Scoop into a parchment paper lined 6x8” pan or silicone baking cups then place in the freezer until solid.
- Cut into squares and enjoy! Store in airtight container in the fridge.
