The perfect healthy on-the-go breakfast or afternoon snack. 

Ingredients
  • 1/4 cup pecans crushed
  • 1 cup gluten-free rolled oats
  • 1/2 apple shredded
  • 1 medium carrot shredded
  • 1 tbsp ground flax
  • 1/4 tsp vanilla extract
  • 1 banana mashed
  • 1 tsp baking soda
  • 1 tbsp maple syrup
  • 1/4 cup natural almond or peanut butter
  • 1 egg
Method
  1. Preheat your oven to 350F

  2. Mix egg, nut butter, maple syrup, vanilla extract, carrots and apple

  3. Mix pecans, oats, flax, and baking soda

  4. Combine everything and mix well

  5. Place on a lined baking sheet and form into cookies

  6. Bake for 18-20 minutes or until they start to brown
