Gluten-Free Breakfast Cookies

The perfect healthy on-the-go breakfast or afternoon snack.
Ingredients
- 1/4 cup pecans crushed
- 1 cup gluten-free rolled oats
- 1/2 apple shredded
- 1 medium carrot shredded
- 1 tbsp ground flax
- 1/4 tsp vanilla extract
- 1 banana mashed
- 1 tsp baking soda
- 1 tbsp maple syrup
- 1/4 cup natural almond or peanut butter
- 1 egg
Method
- Preheat your oven to 350F
- Mix egg, nut butter, maple syrup, vanilla extract, carrots and apple
- Mix pecans, oats, flax, and baking soda
- Combine everything and mix well
- Place on a lined baking sheet and form into cookies
- Bake for 18-20 minutes or until they start to brown
