Konjac (an Asian root vegetable) noodles are a great low-carb alternative to traditional pastas.

- 3 chicken breasts uncooked
- 1 box liquid vegetable broth
- 4 cups water
- 2 carrots diced
- 2 celery stalks diced
- 1 package NuPasta or konjac noodle brand of choice
Add all the ingredients to a crockpot except the konjac noodles
Cook on low for 8 hours
Shred the chicken before serving and add the konjac noodles
