Carrot & Cannellini Bean Dip Recipe
Carrots are my new favorite ingredient for plant-based dips! They blend up so smoothly and add a wonderfully sweet, yet also savory taste to this recipe. Not to mention the beautiful color they can take credit for!

- 5-7 carrots
- 3 tbsp water
- 1 can cannellini beans
- 1 tsp cumin
- 1/4 cup tahini
- 1 tbsp olive oil
- 1 clove garlic
- salt & pepper
Bring a small pot of water to a boil.
Wash and chop carrots. Place carrots in water and boil until soft.
Meanwhile, peel garlic and strain and rinse the beans.
Strain carrots and add to a food processor along with the garlic and water. Blend until smooth.
Add cannellini beans, cumin, tahini, olive oil, salt and pepper. Blend until smooth, adding more water if needed.
